  • 4 pieces garlic cloves, smashed
  • 4 scallions, cut into 2-inch pieces
  • 3 cups water
  • 2 tbsp vegetable oil
  • 0.5 tsp salt (optional, to taste)

Directions

Step 1

Heat the vegetable oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Add the cubed lamb and sear until browned on all sides, about 5-7 minutes. Work in batches if necessary to avoid overcrowding the pan.
