Ingredients

  • 4 medium red beets
  • 4 cups arugula
  • 1 cup goat cheese
  • 0.5 cup walnuts
  • 3 tablespoons orange juice
  • 2 tablespoons balsamic vinegar

  • 1 teaspoon honey
  • 0.5 teaspoon salt

Directions

Step 1

Preheat the oven to 400°F (200°C).

Wash the beets thoroughly and wrap each beet in aluminum foil. Place them on a baking sheet.
