  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 0.25 teaspoon cayenne pepper (optional)
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 cups cooked white rice, for serving
  • 2 green onions, sliced (for garnish)

Directions

Step 1

Rinse the dried red kidney beans under cold water and soak them overnight in a large bowl with enough water to cover the beans by at least 2 inches.

Drain and rinse the soaked beans. Set them aside.

Heat the olive oil in a large pot or Dutch oven over medium heat.
