  • 2 cups cooked red beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup chopped cilantro
  • 0 sour cream (optional, for serving)
  • 0 shredded cheddar cheese (optional, for serving)
  • 0 lime wedges (optional, for serving)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.
