Ingredients

  • 1 pound Dry pinto beans
  • 1 piece Smoked ham hock
  • 1 large Yellow onion, diced
  • 4 cloves Garlic, minced
  • 14.5 ounces Canned diced tomatoes (with juice)
  • 4 cups Chicken broth
  • 2 pieces Bay leaf
  • 1 teaspoon Ground cumin
  • 1 tablespoon Chili powder
  • 1 teaspoon Paprika
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 piece Jalapeño, finely diced (optional)
  • 2 tablespoons Fresh cilantro, chopped (optional, for garnish)
  • 1 tablespoon White vinegar

Directions

Step 1

Rinse the dry pinto beans under cold water, picking out any debris or damaged beans. Place the beans in a large bowl and cover them with water. Soak for at least 8 hours or overnight.

Step 2

Drain and rinse the soaked beans. Set aside.

Step 3

In a large pot or Dutch oven, heat a drizzle of oil over medium heat. Add the diced onion and cook until softened, about 5 minutes.

Step 4

Add the minced garlic, jalapeño (if using), ground cumin, chili powder, and paprika. Stir and cook for 1-2 minutes until fragrant.

Step 5

Add the ham hock, soaked beans, canned diced tomatoes (with juice), chicken broth, and bay leaves to the pot. Stir to combine.

Step 6

Raise the heat to bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer gently for 3-4 hours, stirring occasionally.

Step 7

After 2 hours of cooking, check the beans. If needed, add more chicken broth or water to keep the beans submerged.

Step 8

When the beans are tender and the flavors are well combined, remove the bay leaves and ham hock. Shred any meat from the ham hock and stir it back into the pot.

Step 9

Stir in the salt, black pepper, and white vinegar. Adjust seasoning to taste.

Step 10

Serve the pintos hot, garnished with fresh cilantro if desired. Pair with cornbread, rice, or enjoy as a standalone dish.
