  • 0.5 teaspoons Baking soda
  • 1 teaspoons Ground cinnamon
  • 0.25 teaspoons Ground nutmeg
  • 0.25 teaspoons Salt
  • 2 large Eggs
  • 0.5 cups Unsweetened applesauce
  • 0.5 cups Maple syrup
  • 1 teaspoons Vanilla extract
  • 0.25 cups Walnuts or pecans (optional, chopped)
  • 0.25 cups Dark chocolate chips (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease the tin.

Step 2

In a large mixing bowl, combine the whole wheat flour, rolled oats, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.

Step 3

In another bowl, whisk together the mashed sweet potatoes, eggs, applesauce, maple syrup, and vanilla extract until smooth and well combined.

Step 4

Gradually fold the dry ingredients into the wet ingredients. Mix until just combined; do not overmix.

Step 5

If using, gently fold in the chopped nuts and/or dark chocolate chips at this stage.

Step 6

Scoop the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.

Step 7

Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Step 9

Serve the muffins warm or at room temperature. Store in an airtight container at room temperature for up to 3 days or in the fridge for up to a week.
