Ingredients

  • 200 grams Unsweetened shredded coconut
  • 200 grams Sweetened condensed milk
  • 1 teaspoon Vanilla extract
  • 2 large Egg whites
  • 1 pinch Salt
  • 100 grams Chocolate chips (optional, for drizzling or dipping)

Directions

Step 1

Preheat your oven to 170°C (340°F) and line a baking sheet with parchment paper or a silicone mat.

Step 2

In a large bowl, mix together the shredded coconut, sweetened condensed milk, and vanilla extract until well combined.

Step 3

In a separate medium bowl, whisk the egg whites with a pinch of salt until they form soft peaks.

Step 4

Gently fold the whisked egg whites into the coconut mixture until just combined, being careful not to deflate the egg whites.

Step 5

Using a tablespoon or small ice cream scoop, form small mounds of the mixture and place them on the prepared baking sheet, spacing them about 2 inches apart.
