Ingredients

  • 200 g dry green or brown lentils
  • 100 g streaky bacon
  • 1 medium red onion
  • 2 garlic cloves
  • 2 tbsp olive oil
  • 500 ml chicken or vegetable stock
  • 1 tbsp balsamic vinegar
  • 2 tbsp fresh parsley
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Rinse the lentils under cold water until the water runs clear, then set them aside.

Step 2

Finely chop the red onion, mince the garlic cloves, and cut the streaky bacon into small pieces.

Step 3

Heat 1 tablespoon of olive oil in a large pot or deep skillet over medium heat.

Step 4

Add the bacon to the pot and cook, stirring occasionally, until crispy and golden brown. Remove the bacon with a slotted spoon and set aside on a plate lined with paper towels.

Step 5

In the same pot, add the remaining 1 tablespoon of olive oil, followed by the chopped red onion. Sauté for 3-4 minutes until the onion is soft and translucent.

Add the minced garlic and cook for another 1-2 minutes, stirring frequently to avoid burning.

Stir in the rinsed lentils and pour in the chicken or vegetable stock. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until the lentils are tender and most of the liquid has been absorbed. Stir occasionally to prevent sticking.

Once the lentils are cooked, stir in the crispy bacon and balsamic vinegar. Season with salt and black pepper to taste.
