Ingredients

  • 2 pounds pork ribs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 1 cup ketchup
  • 0.33 cup brown sugar
  • 0.25 cup rice vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons chili sauce (or sriracha)
  • 0.25 cup pineapple juice
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 tablespoon sesame seeds (optional, for garnish)
  • 2 stalks green onions (optional, sliced)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Pat the pork ribs dry with paper towels and remove the membrane on the back of the ribs if not already done.

Step 3

Rub the ribs with a mixture of salt, black pepper, garlic powder, onion powder, and paprika. Drizzle olive oil over the ribs and rub it in to help the seasonings stick.

Step 4

Place the ribs on a foil-lined baking sheet, cover tightly with foil, and bake in the preheated oven for 1 hour.

Step 5

While the ribs are baking, prepare the sweet and sour chili sauce. In a medium saucepan, combine ketchup, brown sugar, rice vinegar, soy sauce, chili sauce (or sriracha), and pineapple juice. Heat over medium heat, stirring occasionally, until the mixture starts to bubble gently.

Step 6

Mix the cornstarch with water in a small bowl to create a slurry. Add the slurry to the saucepan and stir until the sauce thickens. Remove from heat and set aside.

Step 7

After 1 hour, remove the ribs from the oven and discard the foil covering. Brush a generous layer of the sweet and sour chili sauce over both sides of the ribs.

Step 8

Return the ribs to the oven (uncovered) and bake for an additional 20-25 minutes, basting with more sauce halfway through.

Step 9

Switch the oven to broil for 3-5 minutes at the end of the cooking time for a slightly caramelized finish. Watch carefully to avoid burning.

Step 10

Remove the ribs from the oven and let them rest for 5 minutes. Slice into individual ribs and garnish with sesame seeds and sliced green onions if desired.

Step 11

Serve warm and enjoy!
