Ingredients

  • 4 ears Fresh corn on the cob (with husks)
  • 4 tablespoons Unsalted butter, melted
  • 1 teaspoon Ground chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 2 tablespoons Lime juice, freshly squeezed
  • 1 cup Cotija cheese (crumbled)
  • 2 tablespoons Fresh cilantro, chopped
  • 4 Lime wedges (for serving)

Directions

Step 1

Preheat your grill to medium-high heat (around 375-400°F).

Step 2

Carefully peel back the husks of each ear of corn without removing them completely. Remove the silk threads, then fold the husks back up to cover the corn.

Step 3

Soak the corn in a large bowl of water for 10 minutes to prevent the husks from burning on the grill.

Step 4

While the corn is soaking, whisk together the melted butter, chili powder, cumin, garlic powder, salt, and lime juice in a small bowl.

Step 5

Once soaked, remove the corn from the water and shake off any excess moisture.

Step 6

Place the corn (husks on) directly on the grill grates and cook for 10-12 minutes, turning occasionally, until the husks are slightly charred and the corn is tender.

Step 7

Carefully pull the husks back (or remove them completely) and brush each ear of corn generously with the seasoned butter mixture.

Step 8

Turn the corn occasionally for an additional 2-3 minutes on the grill to caramelize the butter and spices onto the kernels.

Step 9

Remove the corn from the grill and immediately sprinkle with crumbled Cotija cheese and chopped cilantro. Serve with lime wedges for extra flavor.
