Ingredients

  • 2 tablespoons olive oil
  • 1 pound Italian sausage (mild or spicy, casings removed)
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 28 ounces crushed tomatoes (canned)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon red pepper flakes (optional)
  • 1 teaspoon sugar
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup whole milk ricotta cheese
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)
  • 1 pound cooked pasta (such as spaghetti or rigatoni)

Directions

Step 1

Heat the olive oil in a large skillet or saucepan over medium heat.

Step 2

Add the Italian sausage, breaking it up with a spoon. Cook until browned and fully cooked, about 7-10 minutes. Remove the sausage from the pan using a slotted spoon and set aside.

Step 3

In the same pan, add the diced onion. Sauté until softened and translucent, about 5-7 minutes.

Step 4

Stir in the minced garlic and cook for 1 minute, until fragrant.

Step 5

Add the crushed tomatoes, tomato paste, oregano, basil, red pepper flakes (if using), sugar, salt, and black pepper to the pan. Stir to combine.

Step 6

Return the cooked sausage to the pan. Reduce the heat to low, cover, and let the sauce simmer for 25-30 minutes, stirring occasionally.

Step 7

While the sauce is simmering, prepare the pasta according to the package instructions. Drain and set aside.

Step 8

After the sauce has simmered, taste and adjust the seasoning, if necessary.

Step 9

Serve the marinara sauce over cooked pasta. Top each plate with a dollop of ricotta cheese and garnish with fresh parsley, if desired.

Step 10

Enjoy this hearty and flavorful dish with a slice of crusty bread!
