Ingredients

  • 2 cups all-purpose flour
  • 0.5 cups unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 0.5 teaspoons salt
  • 1 teaspoon espresso powder or instant coffee
  • 0.5 cups unsalted butter (softened)
  • 1.5 cups granulated sugar
  • 2 pieces eggs (large)
  • 2 teaspoons vanilla extract
  • 1 cup buttermilk
  • 1 cup boiling water

Directions

Step 1

Preheat your oven to 350°F (175°C), and grease and flour two 9-inch round cake pans or line them with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking soda, salt, and espresso powder. Set aside.

Step 3

In a large mixing bowl, use a hand or stand mixer to cream the softened unsalted butter and granulated sugar together until light and fluffy (about 2-3 minutes).

Step 4

Add the eggs, one at a time, beating well after each addition. Then mix in the vanilla extract.

Step 5

Alternate adding the dry ingredients and buttermilk to the butter mixture, beginning and ending with the dry ingredients. Mix just until combined after each addition.

Step 6

Gradually pour the boiling water into the batter while mixing on low speed. The batter will become thin; this is normal.

Step 7

Evenly divide the batter between the prepared cake pans. Tap the pans on the counter a few times to eliminate air bubbles.

Step 8

Bake in the preheated oven for 28-30 minutes or until a toothpick inserted in the center of the cakes comes out clean.

Step 9

Remove the pans from the oven and let the cakes cool in the pans for about 10 minutes. Then, transfer the cakes to a wire rack to cool completely before frosting.

Step 10

Frost with your favorite chocolate or cream cheese frosting, and serve!
