  • 1 pound dried navy beans
  • 6 cups water
  • 6 slices bacon
  • 1 medium onion, diced

  • 0.5 cup brown sugar, packed
  • 0.25 cup ketchup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 4 cups water (for baking)

Directions

Step 1

Rinse the dried navy beans in a colander under cold running water, discarding any debris or damaged beans.

In a large pot, combine the beans and 6 cups of water. Bring to a boil over medium-high heat. Let boil for 2 minutes, then remove from heat, cover, and let soak for 1 hour.

Drain the soaked beans and rinse. Refill the pot with fresh water, covering the beans by about 2 inches. Bring to a boil, then reduce the heat to low and simmer for 45-60 minutes until the beans are tender. Drain and set aside.
