Ingredients

  • 500 ml Whole milk
  • 4 large Egg yolks
  • 50 g Granulated sugar
  • 1 tsp Vanilla extract
  • 1 tsp Cornstarch (optional, for thicker custard)

Directions

Step 1

In a medium saucepan, heat the milk gently over medium-low heat until it is warm but not boiling. Small bubbles should start to form around the edges of the pan.

Step 2

In a separate bowl, whisk together the egg yolks and sugar until the mixture is pale and slightly thickened. If you'd like a thicker custard, whisk in the cornstarch at this stage.

Step 3

Slowly add a ladleful of the warm milk to the egg mixture, whisking constantly to temper the eggs and prevent them from curdling.

Step 4

Gradually pour the tempered egg mixture back into the saucepan with the remaining milk, stirring continuously.

Step 5

Cook the mixture on low heat, stirring constantly with a wooden spoon or silicone spatula, until the custard thickens slightly and coats the back of the spoon. Be careful not to let it boil, as this can cause the custard to split.

Step 6

Once thickened, remove the pan from the heat and stir in the vanilla extract.

Step 7

If desired, strain the custard through a fine-mesh sieve into a clean bowl to remove any lumps for a perfectly smooth texture.

Step 8

Serve the custard warm or allow it to cool to room temperature, then refrigerate until ready to use. Stir before serving, and enjoy!
