Ingredients

  • 2 kilograms fresh ripe tomatoes (Roma or San Marzano recommended)
  • 4 tablespoons extra virgin olive oil
  • 1 medium yellow onion (finely chopped)
  • 4 cloves garlic cloves (minced)
  • 10 leaves fresh basil leaves
  • 2 tablespoons fresh flat-leaf parsley (chopped)
  • 1 teaspoon sea salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.5 teaspoon granulated sugar (optional, to balance acidity)

Directions

Step 1

Start by preparing the tomatoes. Bring a large pot of water to a boil and prepare an ice bath in a separate bowl. Make a small 'X' cut on the bottom of each tomato using a sharp knife.

Step 2

Blanch the tomatoes by placing them in the boiling water for 30 seconds to 1 minute, or until the skin starts to peel back. Immediately transfer the tomatoes to the ice bath to stop the cooking process.

Step 3

Peel the skins off the tomatoes, then cut them in half and remove the seeds. Roughly chop the tomatoes and set them aside.

Step 4

In a large saucepan, heat the olive oil over medium heat. Add the finely chopped onion and sauté for 5-7 minutes until translucent and soft.

Step 5

Add the minced garlic to the pan and cook for an additional 1-2 minutes, stirring frequently, until fragrant. Be careful not to burn the garlic.

Step 6

Add the chopped tomatoes to the pan, stirring well to combine. Lower the heat to a gentle simmer.

Step 7

Tear the fresh basil leaves by hand and add them to the sauce along with the chopped parsley. Stir in the sea salt, black pepper, and sugar (if using).

Step 8

Allow the sauce to simmer gently for 45-60 minutes, stirring occasionally, until it has thickened and the flavors have melded together.

Step 9

Taste the sauce and adjust seasoning if necessary. If desired, use an immersion blender to achieve a smoother texture, or leave it chunky for a rustic feel.

Step 10

Serve immediately over pasta, pizza, or as a base for other Italian dishes, or let it cool and store in the fridge for up to 4 days or the freezer for up to 3 months.
