Ingredients

  • 2 medium zucchini
  • 2 medium carrots
  • 1 large potato
  • 3 stalks green onion
  • 2 eggs
  • 0.33 cup all-purpose flour
  • 0.25 cup grated parmesan cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 tablespoons vegetable oil
  • 1 cup plain Greek yoghurt
  • 2 tablespoons fresh mint leaves
  • 1 tablespoon lemon juice
  • 1 garlic clove

Directions

Step 1

Grate the zucchini, carrots, and potato into a large bowl. Place the grated vegetables in a clean kitchen towel and squeeze out as much moisture as possible.

Step 2

Chop the green onion finely and add it to the bowl with the squeezed vegetables.

Step 3

In a small bowl, whisk the eggs, then add them to the vegetable mixture.

Sprinkle the flour, grated parmesan cheese, salt, and black pepper over the vegetables. Mix everything well until evenly combined.
