Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Ground cumin
  • 1 teaspoon Garlic powder
  • 1 teaspoon Chili powder
  • 1 cup Canned black beans, rinsed and drained
  • 1 cup Frozen sweet corn, thawed
  • 1 4-ounce can Diced green chilies
  • 1 cup Shredded Monterey Jack cheese
  • 2 tablespoons Fresh cilantro, chopped
  • 4 pieces Lime wedges

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pound each chicken breast to an even thickness of about 1/2 inch to ensure even cooking.

Step 3

Rub the chicken breasts with olive oil, then season both sides with salt, black pepper, smoked paprika, ground cumin, garlic powder, and chili powder.

Step 4

Heat a large oven-safe skillet over medium-high heat. Add 1 tablespoon of olive oil and sear the chicken breasts for 2-3 minutes per side, until golden brown. Remove the chicken from the skillet and set aside.

Step 5

In the same skillet, reduce the heat to medium and add the black beans, corn, and green chilies. Stir to combine and spread the mixture evenly across the bottom of the skillet.

Step 6

Place the seared chicken breasts on top of the bean and corn mixture.

Step 7

Sprinkle the shredded Monterey Jack cheese evenly over the chicken breasts.

Step 8

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and bubbly.

Step 9

Remove from the oven and let rest for 5 minutes.

Step 10

Garnish the dish with freshly chopped cilantro and serve with lime wedges on the side for a zesty finish.
