  • 6 cups Yellow squash
  • 2 tablespoons Olive oil
  • 1 medium, diced Yellow onion
  • 2 cloves, minced Garlic
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Butter
  • 3 tablespoons All-purpose flour
  • 1.5 cups Whole milk
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Shredded Parmesan cheese
  • 0.5 cup Sour cream
  • 2 large Eggs
  • 1 cup, crushed Ritz crackers
  • 2 tablespoons Butter (melted)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x13-inch casserole dish lightly with butter or oil.

Step 2

Steam or boil the squash until tender, about 8-10 minutes. Drain thoroughly and let cool slightly, then mash lightly with a fork. Set aside.

Step 3

Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1 minute. Season with salt and black pepper.
