Ingredients

  • 1 cup Raw buckwheat groats
  • 0.5 cup Sesame seeds
  • 0.5 cup Raisins
  • 0.25 cup Ground flaxseed
  • 0.75 cup Water
  • 0.5 teaspoon Sea salt
  • 0.25 teaspoon Ground cinnamon (optional)

Directions

Step 1

Rinse the buckwheat groats thoroughly under cold water and soak them in a bowl of water for 4-6 hours. Once soaked, drain and rinse again.

Step 2

In a mixing bowl, combine the soaked buckwheat groats, sesame seeds, raisins, and ground flaxseed.

Step 3

Add water, sea salt, and ground cinnamon (if using) to the mixture. Stir well until the ingredients are evenly combined and the mixture has a slightly sticky texture.

Step 4

Line a dehydrator tray with a non-stick sheet or parchment paper. If you don’t have a dehydrator, you can use a baking sheet lined with parchment paper and set it aside to air-dry in a warm spot.

Step 5

Spread the mixture evenly on the tray in a thin layer (approximately 1/8 inch thick). Aim for a consistent thickness to ensure even drying.

Step 6

Place the tray in the dehydrator at 115°F (46°C) and let it dry for 6-8 hours. Flip the crackers halfway through the drying process to ensure even dehydration. If air-drying, it may take up to 24 hours.

Step 7

Store the crackers in an airtight container at room temperature for up to two weeks.
