Ingredients

  • 1 cup Raw cashews
  • 0.5 cup Filtered water
  • 2 cloves Garlic
  • 2 tablespoons Lemon juice
  • 3 tablespoons Nutritional yeast

  • 0.5 teaspoon Black pepper
  • 1 cup Frozen peas (thawed)
  • 1 large Red bell pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Soak the raw cashews in warm water for 20-30 minutes, then drain and rinse well.

While the cashews soak, spiralize the zucchini into thin noodles using a spiralizer. If you don't have a spiralizer, a julienne peeler or mandoline can also be used. Set the zucchini noodles aside.
