Ingredients

  • 18 oz Cheese ravioli (fresh or frozen)
  • 3 tbsp Olive oil
  • 3 cloves Garlic cloves, minced
  • 1 medium Red bell pepper, sliced thinly
  • 1 medium Yellow bell pepper, sliced thinly
  • 1.5 cups Cherry tomatoes, halved
  • 2 tbsp Fresh basil, chopped (plus extra for garnish)
  • 0.5 cup Parmesan cheese, grated
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 tsp Red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil over medium-high heat. Cook the ravioli according to the package instructions. Once cooked, drain and set aside, reserving 1/2 cup of the pasta water.

Step 2

In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for 1 minute, until fragrant but not browned.

Add the sliced red and yellow bell peppers to the skillet. Cook for 5-7 minutes, stirring occasionally, until the peppers are softened.

Stir in the halved cherry tomatoes and cook for another 3-4 minutes, until they begin to soften and release their juices.
