  • 1 cup Heavy cream
  • 1 cup Parmesan cheese, grated
  • 2 tablespoons Fresh parsley, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground
  • 0.125 teaspoon Nutmeg, freshly grated (optional)
  • 4 liters Water
  • 1 tablespoon Salt (for pasta water)

Directions

Step 1

Bring 4 liters of water to a boil in a large pot. Add 1 tablespoon of salt to the water for seasoning.

Step 2

Cook the ravioli according to the package instructions, typically 3-5 minutes for fresh ravioli or 8-10 minutes for frozen. Reserve 1/2 cup of pasta cooking water and drain the ravioli. Set aside.

Step 3

Heat a large skillet over medium heat and add the butter and olive oil. Once the butter has melted, add the minced garlic and sauté for 1-2 minutes until fragrant.
