Ingredients

  • 400 grams fresh spinach
  • 4 cloves garlic
  • 2 tablespoons vegetable oil
  • 1.5 tablespoons soy sauce
  • 1 teaspoon fish sauce
  • 0.5 teaspoons sugar
  • 1 whole red chili (optional)
  • 2 tablespoons water

Directions

Step 1

Wash the spinach thoroughly in cold water and drain well. Trim off any tough stems if necessary.

Step 2

Peel and finely mince the garlic. If using red chili, slice thinly on the diagonal.

Step 3

Heat a large wok or skillet over medium-high heat. Add the vegetable oil and swirl to coat the pan.

Step 4

Add the minced garlic (and chili, if using) to the hot oil. Stir-fry for 30 seconds until fragrant, being careful not to burn the garlic.

Step 5

Add the spinach to the wok in batches, tossing gently to wilt it down.

Step 6

In a small bowl, mix the soy sauce, fish sauce, sugar, and water. Pour the sauce mixture over the spinach and stir to coat evenly.

Step 7

Cook for 2-3 minutes, stirring frequently, until the spinach is fully wilted and infused with the sauce.

Step 8

Remove from heat and transfer to a serving dish. Serve immediately as a side dish or enjoy with steamed rice.
