  • 3 tablespoons Olive oil
  • 1 teaspoon Dried thyme
  • 10 leaves Fresh basil leaves
  • 100 grams Goat’s cheese
  • 50 grams Breadcrumbs (panko or regular)
  • 2 tablespoons, chopped Fresh parsley
  • 1 tablespoon Fresh thyme leaves
  • 2 tablespoons Unsalted butter
  • 1 teaspoon (or to taste) Salt
  • 0.5 teaspoon (or to taste) Black pepper

Directions

Step 1

Preheat the oven to 200°C (400°F).

Step 2

Wash and dice the eggplant, zucchini, red bell pepper, yellow bell pepper, and tomatoes into roughly 2 cm pieces. Finely chop the onion and mince the garlic cloves.

Step 3

In a large skillet or sauté pan, heat 2 tablespoons of olive oil over medium heat. Add the onion and garlic, and sauté for 2-3 minutes until softened and fragrant.

Add the diced eggplant, zucchini, and bell peppers to the skillet. Cook for 8-10 minutes, stirring occasionally, until the vegetables are slightly softened.

Add the diced tomatoes, dried thyme, salt, and black pepper to the skillet. Stir well, and let the mixture simmer for 10 minutes until the flavors meld together and the vegetables are tender. Remove from heat and stir in the fresh basil leaves.
