  • 3 tablespoons Olive oil
  • 4 Garlic cloves, minced
  • 1 large Onion, diced
  • 2 tablespoons Tomato paste
  • 1 cup Vegetable broth
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Dice the eggplant, zucchini, yellow squash, and bell peppers into bite-sized pieces. Cut the Roma tomatoes into quarters.

Step 2

In a skillet over medium heat, warm 2 tablespoons of olive oil. Sauté the onion for 3-4 minutes, or until softened. Add the garlic and sauté for another 30 seconds.
