  • 250 grams All-purpose flour
  • 150 grams Unsalted butter (cold, cubed)
  • 50 grams Granulated sugar
  • 1 teaspoon Salt
  • 60 milliliters Cold water
  • 150 grams Raspberry jam
  • 1 large Egg (beaten, for egg wash)
  • 20 grams Powdered sugar (for dusting, optional)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt.

Step 2

Add the cold, cubed butter into the flour mixture. Use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs.

Step 3

Gradually drizzle in the cold water, mixing with a fork or your hands until the dough comes together. Do not overwork the dough.

Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 1 hour to chill.
