Ingredients

  • 2 cups All-purpose flour
  • 0.75 cups Granulated sugar
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.5 cups Unsalted butter, melted and slightly cooled
  • 0.75 cups Milk
  • 1 large Egg
  • 1 teaspoons Vanilla extract
  • 1.5 cups Fresh raspberries
  • 0.5 cups Brown sugar (for streusel topping)
  • 0.3 cups All-purpose flour (for streusel topping)
  • 0.5 teaspoons Ground cinnamon (for streusel topping)
  • 0.25 cups Unsalted butter, cold and cubed (for streusel topping)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease with nonstick spray.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Step 3

In a separate bowl, combine the melted butter, milk, egg, and vanilla extract. Whisk until well blended.

Step 4

Pour the wet ingredients into the dry ingredients. Stir gently until just combined—be careful not to overmix.

Step 5

Gently fold in the fresh raspberries, being careful not to mash them.

Step 6

Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.

Step 7

To make the streusel topping, combine the brown sugar, flour, and cinnamon in a small bowl. Add the cold, cubed butter and use a pastry cutter or your fingers to work the mixture until it resembles coarse crumbs.

Step 8

Sprinkle the streusel topping evenly over the muffin batter.

Step 9

Bake in the preheated oven for 18–20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 10

Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

Serve warm or at room temperature. Enjoy!
