Ingredients

  • 190 grams all-purpose flour
  • 200 grams granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoons salt
  • 115 grams unsalted butter, melted
  • 2 eggs
  • 120 grams plain Greek yogurt
  • 3 tablespoons lemon juice
  • 2 teaspoons lemon zest
  • 1 teaspoons vanilla extract
  • 150 grams fresh raspberries
  • 100 grams powdered sugar
  • 2 tablespoons lemon juice (for glaze)

Directions

Step 1

Preheat your oven to 175°C (350°F) and grease a 9x5-inch loaf pan or line it with parchment paper.

In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt. Set aside.

In a large bowl, whisk together the melted butter, eggs, Greek yogurt, lemon juice, lemon zest, and vanilla extract until smooth and well combined.

Gradually add the dry ingredients to the wet ingredients, folding gently with a spatula until just combined. Be careful not to overmix.
