  • 500 grams Fresh raspberries
  • 300 grams Granulated sugar
  • 750 milliliters Water
  • 2 tablespoons Fresh lemon juice

Directions

Step 1

Wash the raspberries thoroughly under running water and set them aside to drain.

Step 2

In a large saucepan, combine the raspberries, sugar, and water.

Step 3

Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally to dissolve the sugar.

Step 4

Reduce the heat to low and let the mixture simmer for about 15 minutes, stirring occasionally. The raspberries should break down and release their juices during this time.

Step 5

Remove the saucepan from the heat and let the mixture cool slightly for 5-10 minutes.

Step 6

Strain the mixture through a fine mesh sieve or cheesecloth into a large bowl, pressing down on the solids with a spoon to extract all the liquid.

Discard the remaining pulp and return the strained liquid to the saucepan.
