Ingredients

  • 4 pieces (12 oz each) Ribeye steaks
  • 2 teaspoons Kosher salt
  • 1.5 teaspoons Freshly ground black pepper
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 0.5 teaspoons Onion powder
  • 1 tablespoon (finely chopped) Fresh rosemary leaves
  • 2 tablespoons Olive oil
  • 4 tablespoons Unsalted butter
  • 3 cloves (smashed) Garlic cloves
  • 4 sprigs Fresh thyme
  • 2 tablespoons (chopped, for garnish) Fresh parsley

Directions

Step 1

1. Remove the steaks from the refrigerator and let them sit at room temperature for 30 minutes to ensure even cooking.

Step 2

2. In a small bowl, mix the kosher salt, black pepper, smoked paprika, garlic powder, onion powder, and rosemary until well combined.

Step 3

3. Pat the steaks dry with paper towels, then generously rub both sides of each steak with the spice mixture.

Step 4

4. Heat a large cast-iron skillet over medium-high heat and add the olive oil. Allow the skillet to become hot before adding the steaks.

Step 5

5. Once hot, place the steaks into the skillet and sear for 3-4 minutes per side for medium-rare, or adjust the cooking time based on your desired doneness.

Step 6

6. During the last 2 minutes of cooking on the second side, reduce the heat to medium-low and add the unsalted butter, smashed garlic cloves, and thyme sprigs to the skillet.

Step 7

7. Tilt the skillet slightly and use a spoon to continuously baste the steaks with the melted butter and herbs to infuse added flavor.

Step 8

8. Remove the steaks from the skillet and transfer them to a clean plate or cutting board. Tent loosely with aluminum foil and let rest for 5 minutes to allow the juices to redistribute.

Step 9

9. Garnish the steaks with freshly chopped parsley and serve hot alongside your favorite sides.
