  • 1 cup Refried beans (low-fat or fat-free)
  • 0.5 cup Shredded reduced-fat cheddar cheese
  • 1 cup Romaine lettuce, shredded
  • 1 medium Roma tomato, diced
  • 1 stalk Green onion, sliced thinly
  • 1 teaspoon Taco seasoning (low-sodium)
  • 4 tablespoons Plain Greek yogurt (non-fat)
  • 4 tablespoons Fresh salsa or pico de gallo
  • 0 to taste Hot sauce (optional)

Directions

Step 1

Warm the flour tortillas in the microwave for 10-15 seconds to make them pliable.

Step 2

In a small saucepan over medium heat, warm the refried beans for about 2-3 minutes, stirring in the taco seasoning for added flavor.

Step 3

Lay a warmed tortilla flat on a clean surface. Spread half the warmed refried beans down the center of the tortilla, leaving about 2 inches of space at the edges.

Step 4

Sprinkle 1/4 cup of shredded reduced-fat cheddar cheese over the beans.

Step 5

Top the beans and cheese with 1/2 cup of shredded romaine lettuce, half the diced Roma tomato, and half of the sliced green onion.

Step 6

Add 2 tablespoons of plain Greek yogurt and 2 tablespoons of fresh salsa or pico de gallo on top. If desired, drizzle with your favorite hot sauce for an extra kick.

Step 7

Fold the sides of the tortilla inward, then roll it tightly from the bottom up to form a burrito. Repeat this process for the second burrito.

Step 8

Optional: Heat a nonstick skillet over medium heat and place each burrito seam-side down in the skillet. Cook for 1-2 minutes on each side until lightly browned and crispy.

Step 9

Serve immediately and enjoy your delicious Randy S 318 Cal Re Fried Bean Burrito!
