  • 14.5 oz diced tomatoes, canned
  • 2 tbsp tomato paste
  • 15 oz black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 0.5 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 4 large russet potatoes, peeled and cubed
  • 4 tbsp butter
  • 0.5 cup milk
  • 1 cup cheddar cheese, shredded
  • 2 tbsp green onions, chopped (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, heat olive oil over medium heat. Add the diced onion and red bell pepper, cooking until softened, about 5 minutes.

Stir in the jalapeño (if using) and minced garlic, cooking for another 1 minute until fragrant.

Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula. Drain any excess fat.
