Ingredients

  • 1 pound Dried pinto beans
  • 4 slices Bacon
  • 1 medium Yellow onion
  • 4 cloves Garlic cloves
  • 2 tablespoons Tomato paste
  • 4 cups Beef broth
  • 2 cups Water
  • 2 peppers Chipotle peppers in adobo sauce
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Oregano
  • 2 tablespoons Brown sugar
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0 Optional: fresh cilantro for garnish

Directions

Step 1

Soak the dried pinto beans in water overnight or for at least 8 hours. Drain and rinse before using.

Step 2

In a large Dutch oven or heavy-bottomed pot, cook the bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the rendered fat in the pot.

Finely chop the yellow onion and mince the garlic cloves. Add both to the pot with the bacon fat and sauté over medium heat until softened, about 5 minutes.

Stir in the tomato paste, cooking for another minute to caramelize slightly.
