  • 1 pound Ground beef
  • 1 medium Yellow onion, finely diced
  • 2 cloves Garlic, minced
  • 1.5 cups Frozen mixed vegetables (peas, carrots, and corn)
  • 0.5 cup Beef broth
  • 1 tablespoon All-purpose flour
  • 1 tablespoon Tomato paste
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Bring a large pot of salted water to a boil. Add the diced potatoes and cook until fork-tender, about 15 minutes. Drain and transfer to a large mixing bowl.
