Ingredients

  • 150 grams unsalted butter
  • 150 grams granulated sugar
  • 50 grams light brown sugar
  • 3 large eggs
  • 200 grams all-purpose flour
  • 1.5 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoons ground nutmeg
  • 0.25 teaspoons ground cloves
  • 2 medium apples (e.g., Granny Smith, peeled, cored, diced)
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 50 milliliters whole milk
  • 0 powdered sugar (for dusting, optional)

Directions

Step 1

Preheat your oven to 175°C (350°F) and grease a 9-inch round cake tin. Line the bottom with parchment paper for easy removal.

Step 2

In a mixing bowl, cream the unsalted butter, granulated sugar, and light brown sugar together until light and fluffy. This should take about 3-4 minutes using a handheld or stand mixer.

Step 3

Add the eggs one at a time to the butter and sugar mixture, beating well after each addition. Stir in the vanilla extract.

Step 4

In a separate bowl, sift together the all-purpose flour, baking powder, ground cinnamon, ground nutmeg, and ground cloves.

Step 5

Gradually fold the dry ingredients into the wet mixture, alternating with the milk. Start and end with the dry ingredients, mixing just until everything is combined. Do not overmix the batter.

Step 6

In another bowl, toss the diced apples with the lemon juice to prevent them from browning. Fold the apples gently into the batter.

Step 7

Pour the batter into the prepared cake tin and smooth the top with a spatula.

Step 8

Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted in the center comes out clean.

Step 9

Allow the cake to cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.

Step 10

Once cooled, dust the top of the cake with powdered sugar if desired. Slice and serve.
