  • 2 packs ramen noodles
  • 1 large yellow onion
  • 1 large red bell pepper
  • 4 cups vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 garlic cloves
  • 1 inch piece ginger
  • 2 green onions
  • 2 tablespoons olive oil
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Slice the red bell pepper into thin strips and place them on a baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle with a pinch of salt and black pepper. Roast in the preheated oven for 15-20 minutes, or until the edges are slightly charred.
