Ingredients

  • 1 package instant ramen noodles (any flavor, discard seasoning packet)
  • 2 cups water
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 stalks green onions, thinly sliced
  • 0.5 cup shredded carrots
  • 8 large leaves romaine lettuce leaves
  • 1 tablespoon sesame seeds, toasted
  • 1 teaspoon sriracha or chili sauce (optional)

Directions

Step 1

Bring 2 cups of water to a boil in a medium saucepan. Add the instant ramen noodles and cook for 2-3 minutes, or until softened. Drain and set aside.

Step 2

In a small bowl, whisk together the soy sauce, sesame oil, honey, minced garlic, and grated ginger. If you want a spicier flavor, add the sriracha or chili sauce.

Step 3

Heat a non-stick skillet over medium heat. Pour in the sauce mixture and let it simmer for about 1 minute to enhance the flavors.

Step 4

Add the cooked ramen noodles to the skillet and toss to coat them evenly with the sauce. Stir in the shredded carrots and half of the sliced green onions. Cook for an additional 1-2 minutes, then remove from heat.

Step 5

Lay out the romaine lettuce leaves on a clean surface. Spoon a portion of the noodle mixture into the center of each leaf.

Step 6

Sprinkle the wraps with the remaining green onions and toasted sesame seeds for garnish.

Step 7

Fold the sides of each lettuce leaf slightly inward, then roll them up tightly like a wrap. Serve immediately and enjoy!
