Ingredients

  • 1 cup Green olives (pitted)
  • 1 cup Kalamata olives (pitted)
  • 0.5 cup Roasted red peppers
  • 2 stalks Celery
  • 0.5 medium Red onion
  • 2 tablespoons Capers
  • 0.25 cup Fresh parsley
  • 2 cloves Fresh garlic
  • 2 tablespoons Red wine vinegar
  • 0.25 cup Extra virgin olive oil
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Crushed red pepper flakes
  • 0.25 teaspoon Black pepper

Directions

Step 1

1. Begin by finely chopping the green olives, Kalamata olives, roasted red peppers, celery, and red onion. Place all the chopped ingredients into a large mixing bowl.

Step 2

2. Mince the garlic cloves and finely chop the fresh parsley. Add them to the bowl with the other chopped ingredients.

Step 3

3. Stir in the capers, red wine vinegar, and extra virgin olive oil. Mix well to ensure everything is evenly coated.

Step 4

4. Sprinkle in the dried oregano, crushed red pepper flakes, and black pepper. Toss the salad until the seasonings are fully incorporated.

Step 5

5. Taste the olive salad and adjust the seasoning as needed. If desired, you can also add a pinch of salt, though the olives and capers bring plenty of salinity.

Step 6

6. Cover the bowl and let the salad marinate in the refrigerator for at least 1 hour to allow the flavors to meld together.

Step 7

7. Serve Ralf's Pretty Good Olive Salad chilled. Pair it with toasted bread, use it as a sandwich topping, or enjoy it as a side dish.
