Preheat your oven to 375°F (190°C) and lightly spray a 9x13-inch baking dish with cooking spray.
In a large skillet over medium-high heat, cook the ground beef until it is browned and fully cooked, about 7-8 minutes. Drain any excess grease.
Add the diced onion and minced garlic to the skillet with the beef. Cook for 2-3 minutes, or until the onion becomes soft and translucent.
Stir in the taco seasoning and half of the enchilada sauce (about 7-8 ounces). Mix well and remove the skillet from heat.
Spread a thin layer of the remaining enchilada sauce on the bottom of the prepared baking dish.
Begin layering: place 4 corn tortillas evenly over the bottom of the dish. Spread half of the ground beef mixture on top of the tortillas. Then spread half the can of refried beans and sprinkle 1 cup of the shredded cheese over the layer.
