Preheat your oven to 180°C (350°F).
Cut the cauliflower into florets, rinse them, and boil in salted water for about 8-10 minutes until tender but not mushy. Drain well and set aside.
Rinse the rice under cold water and cook according to package instructions. Once cooked, fluff it with a fork and set aside.
Finely chop the onion and mince the garlic.
In a large skillet, heat the vegetable oil over medium heat. Add the onions and garlic, then sauté until softened and translucent, about 3-4 minutes.
Add the ground pork or beef to the skillet. Cook, breaking it apart with a wooden spoon, until the meat is browned and cooked through. Season with paprika, salt, and black pepper. Remove from heat and let cool slightly.
In a small bowl, mix the sour cream with one of the eggs until smooth. Set aside.
In a separate bowl, beat the remaining egg and stir it into the cooked rice.
Grease a medium-sized baking dish with butter. Sprinkle a thin layer of breadcrumbs evenly across the bottom.
Assemble the dish by layering half of the cooked cauliflower at the bottom of the baking dish. Spread half of the rice mixture over the cauliflower, followed by half of the meat mixture.
Repeat the layers using the remaining cauliflower, rice, and meat.
Pour the sour cream and egg mixture evenly over the top layer, spreading it out with a spatula.
Sprinkle the grated cheese over the top to cover the dish completely.
Bake in the preheated oven for 30-35 minutes until the top is golden and bubbling.
