Ingredients

  • 2 cups All-purpose flour
  • 0.75 cups Granulated sugar
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 3 large Eggs
  • 1.5 teaspoons Vanilla extract
  • 0.25 cups Unsalted butter, melted and slightly cooled
  • 0.75 cups Raisins
  • 0.75 cups Walnuts, chopped

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

Step 3

In a separate bowl, beat the eggs, vanilla extract, and melted butter until smooth.

Step 4

Gradually add the wet ingredients to the dry ingredients and mix until a dough forms. It will be sticky.

Step 5

Fold in the raisins and chopped walnuts, ensuring they are evenly distributed.

Step 6

Lightly flour your hands and divide the dough in half. Shape each half into a log about 10 inches long and 2 inches wide, then place them on the prepared baking sheet with space in between.

Step 7

Bake for 20-25 minutes, or until the logs are golden brown and firm to the touch. Remove from the oven and let them cool for 10 minutes.

Step 8

Using a serrated knife, slice the logs diagonally into 1/2-inch-thick biscotti slices.

Step 9

Lay the slices cut-side down on the baking sheet. Return to the oven and bake for 10 minutes, then flip the biscotti and bake for another 10 minutes, or until crisp.

Step 10

Allow the biscotti to cool completely on a wire rack before serving or storing in an airtight container.
