Ingredients

  • 1 cup Raisins
  • 1.5 cups Water
  • 0.75 cup Granulated sugar
  • 3 tablespoons Cornstarch
  • 0.25 teaspoons Salt
  • 2 cups Whole milk
  • 2 Egg yolks
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Vanilla extract
  • 1 Pre-baked pie crust
  • 1 cup Whipped cream (for topping)

Directions

Step 1

Place the raisins and water in a medium saucepan. Bring to a boil over medium heat, then reduce heat to low and let simmer for 5 minutes. Remove the saucepan from heat and set it aside.

Step 2

In a separate medium saucepan, whisk together the granulated sugar, cornstarch, and salt. Gradually add the milk while whisking constantly until the mixture is smooth.

Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a boil. Reduce the heat to low and cook for an additional 1–2 minutes, continuing to stir.
