  • 2 cups Raisin Bran cereal
  • 1 cup Milk (preferably low-fat or plant-based)

  • 0.5 cup Brown sugar (packed)
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 1 large Egg
  • 0.25 cup Vegetable oil (or melted coconut oil)
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.

Step 2

In a large mixing bowl, combine the raisin bran cereal and milk. Let the mixture sit for about 5 minutes, allowing the cereal to soften.

Step 3

In a separate medium bowl, whisk together the all-purpose flour, whole wheat flour, brown sugar, baking powder, baking soda, ground cinnamon, and salt.
