  • 1 cup dried green or brown lentils, rinsed
  • 1 14.5-ounce can fire-roasted diced tomatoes, with juices
  • 6 cups vegetable broth
  • 1 large bunch collard greens, stems removed and leaves chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons lemon juice

Directions

Step 1

Heat the olive oil in a large pot over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
