Ingredients

  • 1 lb Large shrimp, peeled and deveined
  • 1 cup Buttermilk
  • 1 cup All-purpose flour
  • 0.5 cup Cornstarch
  • 2 tsp Paprika
  • 1 tsp Garlic powder
  • 0.5 tsp Cayenne pepper
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 4 cups Vegetable oil (for frying)
  • 0.5 cup Sweet chili sauce
  • 0.25 cup Mayonnaise
  • 2 tbsp Lime juice
  • 2 tbsp Chopped fresh cilantro (optional, for garnish)

Directions

Step 1

In a medium bowl, place the peeled and deveined shrimp. Pour the buttermilk over the shrimp and let them marinate for 10 minutes.

Step 2

While the shrimp is marinating, prepare the breading. In another bowl, mix together the all-purpose flour, cornstarch, paprika, garlic powder, cayenne pepper, salt, and black pepper.

Step 3

Heat the vegetable oil in a large, deep skillet or Dutch oven over medium heat until it reaches 350°F (175°C).

Step 4

Remove the shrimp from the buttermilk, allowing any excess to drip off. Coat each shrimp generously in the seasoned flour mixture, pressing gently to ensure the coating sticks.

Step 5

Carefully place the coated shrimp into the hot oil, working in batches to avoid overcrowding. Fry for 2-3 minutes per side, or until the shrimp are golden brown and crispy.

Step 6

Use a slotted spoon to transfer the fried shrimp to a paper towel-lined plate to drain excess oil.

Step 7

To prepare the dipping sauce, whisk together the sweet chili sauce, mayonnaise, and lime juice in a small bowl until smooth.

Step 8

Serve the crispy Mogambo Shrimp warm with the tangy sauce on the side for dipping. Garnish with chopped cilantro if desired.
