Ingredients

  • 1 cup raw cashews
  • 0.5 cup Brazil nuts
  • 0.5 cup pumpkin seeds
  • 0.5 cup shredded unsweetened coconut
  • 1.5 cups granulated sugar
  • 0.5 cup light corn syrup
  • 0.25 cup water
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
  • 1 teaspoon baking soda

Directions

Step 1

Prepare a large baking sheet by lining it with parchment paper or a silicone baking mat. Set aside.

Step 2

In a medium-sized mixing bowl, combine the cashews, Brazil nuts, pumpkin seeds, and shredded coconut. Stir to mix evenly, and set aside.

Step 3

In a medium saucepan, combine the sugar, corn syrup, and water. Place the saucepan over medium heat, stirring occasionally, until the sugar dissolves completely.

Step 4

Increase the heat to medium-high and bring the mixture to a boil. Do not stir while boiling. Use a candy thermometer to monitor the temperature and continue cooking until it reaches 300°F (hard crack stage). This should take about 10-15 minutes.

Once the mixture reaches the desired temperature, immediately remove the saucepan from the heat. Stir in the unsalted butter, vanilla extract, and salt. Be careful, as the mixture may bubble up.
