Ingredients

  • 1 pound Ground beef
  • 1 pound Ground pork
  • 1 medium Yellow onion, diced
  • 4 cloves Garlic, minced
  • 15 ounces Tomato sauce
  • 15 ounces Crushed tomatoes
  • 1 cup Beef broth
  • 2 tablespoons Apple cider vinegar
  • 3 tablespoons Yellow mustard
  • 2 tablespoons Light brown sugar
  • 2 tablespoons Chili powder
  • 1 tablespoon Paprika
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 15 ounces Kidney beans, drained and rinsed
  • 15 ounces Pinto beans, drained and rinsed
  • 1 small Jalapeño, seeded and diced (optional)
  • 2 tablespoons Fresh cilantro, chopped (for garnish)

Directions

Step 1

In a large pot or Dutch oven, heat a drizzle of oil over medium-high heat.

Step 2

Add the ground beef and ground pork to the pot. Cook until browned, breaking it up with a wooden spoon as it cooks. Drain excess fat if necessary.

Step 3

Add the diced onion and minced garlic to the pot. Sauté for about 3 minutes, or until the onion is translucent and fragrant.

Step 4

Stir in the tomato sauce, crushed tomatoes, and beef broth. Bring to a gentle simmer.

Step 5

Add apple cider vinegar, yellow mustard, and brown sugar. Stir to combine, letting the flavors meld together.

Step 6

Season the chili with chili powder, paprika, ground cumin, cayenne pepper, salt, and black pepper. Adjust the seasoning to taste.

Step 7

Add the kidney beans and pinto beans, stirring to combine.

Step 8

If you prefer a spicier chili, stir in the diced jalapeño at this stage.

Step 9

Reduce the heat to low and let the chili simmer uncovered for about 1 to 1.5 hours, stirring occasionally to prevent sticking. This allows the flavors to deepen and develop.

Step 10

Taste and adjust the seasoning as needed before serving.

Step 11

Ladle the chili into bowls and garnish with chopped fresh cilantro. Serve hot with cornbread or over steamed rice, if desired.
