  • 2 lbs Boneless, skinless chicken thighs
  • 0.75 cup Soy sauce
  • 0.5 cup Water
  • 0.5 cup Brown sugar
  • 2 tbsp Honey
  • 3 cloves Garlic, minced
  • 1 tbsp Fresh ginger, grated
  • 2 tbsp Rice vinegar
  • 1 tbsp Sesame oil
  • 2 medium Carrots, sliced into thin matchsticks
  • 1 large Red bell pepper, thinly sliced
  • 1 large Yellow bell pepper, thinly sliced
  • 1 cup Purple cabbage, shredded
  • 1 cup Snow peas, trimmed
  • 3 stalks Green onions, thinly sliced
  • 4 cups Cooked jasmine rice
  • 2 tbsp Toasted sesame seeds

Directions

Step 1

In a medium bowl, whisk together soy sauce, water, brown sugar, honey, minced garlic, grated ginger, rice vinegar, and sesame oil to create the marinade.

Place the chicken thighs in a large resealable plastic bag or shallow dish and pour in the marinade. Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for best flavor.

Heat a large, deep skillet over medium heat. Remove the chicken from the marinade, reserving the marinade, and place the chicken thighs in the skillet.
