Ingredients

  • 1 pound ground beef
  • 8 ounces cream cheese
  • 10 ounces canned diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1 cup black beans (drained and rinsed)
  • 1 cup corn kernels (canned, drained, or frozen and thawed)
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 piece jalapeño pepper (optional, finely chopped)
  • 1 bag tortilla chips

Directions

Step 1

In a large skillet over medium heat, cook the ground beef until it is browned and no longer pink, breaking it apart with a spoon as it cooks. Drain any excess grease and return the skillet to the heat.

Step 2

Lower the heat to medium-low and add the cream cheese to the skillet. Stir until the cream cheese is melted and fully incorporated with the ground beef.

Step 3

Add the canned diced tomatoes with green chilies (including the liquid), black beans, corn kernels, smoked paprika, ground cumin, garlic powder, salt, and black pepper. If you're using a jalapeño pepper for extra heat, stir it in now.

Step 4

Cook the mixture for 5-7 minutes, stirring occasionally, until everything is well combined and heated through.

Step 5

Sprinkle the shredded cheddar cheese on top and cover the skillet with a lid. Let the cheese melt, about 2-3 minutes.

Step 6

Transfer the dip to a serving bowl or serve directly from the skillet. Garnish with diced fresh jalapeños or chopped cilantro, if desired.

Step 7

Serve warm with tortilla chips on the side for dipping. Enjoy!
