Ingredients

  • 500 grams Whole wheat flour
  • 250 grams Bread flour
  • 7 grams Active dry yeast
  • 10 grams Sugar
  • 10 grams Salt
  • 450 ml Warm water
  • 15 ml Olive oil

Directions

Step 1

In a small bowl, mix the active dry yeast and sugar in 100 ml of warm water. Let it sit for about 10 minutes until it becomes frothy.

Step 2

In a large mixing bowl, combine the whole wheat flour, bread flour, and salt.

Step 3

Create a well in the center of the dry ingredients and pour in the yeast mixture, the remaining warm water, and olive oil.

Step 4

Mix the ingredients together until a sticky dough forms.

Step 5

Turn the dough out onto a lightly floured surface and knead for about 10 minutes until the dough becomes smooth and elastic.

Step 6

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

Step 7

Preheat the oven to 250°C (482°F) and place a baking stone or an inverted baking sheet inside.

Step 8

Once the dough has risen, punch it down to release excess air and divide it into 6 equal portions.

Step 9

Shape each portion into a ball and let them rest, covered, for 10 minutes.

Step 10

Using a rolling pin, roll each ball into a flat round disk about 1/4 inch thick.

Step 11

Carefully place the flattened dough onto the preheated baking stone or baking sheet. You can bake 2-3 rounds at a time depending on your oven size.

Step 12

Bake each batch for approximately 5-7 minutes per side until the bread puffs up and develops a light golden color.

Step 13

Remove the baked flatbreads from the oven and cover with a clean kitchen towel to keep them soft until serving.

Step 14

Serve warm with your choice of dips or stews for an authentic Egyptian experience.
